Poached chicken soup with soft herbs
The ultimate bowl of comfort. My version uses a whole chicken and is poached in veg, stock and herbs to create a rich poultry base. A thrifty recipe that will feed you over the course of a week.

Everyone needs a chicken soup in their repertoire and I like to think mine is one the easiest, flavour packed versions going. The key is using a whole, good quality chicken,
handful of fragrant soft herbs and a good squeeze of lemon at the end. This really is a prime example of simple, home cooking at its best.
